What's your favorite fish for fish tacos?

My wife and I have gone to Minnesota for the past 4 summers and what they call "Sunnies" (looks like Blue Gill to me) makes a great fish taco. *They have a dry coating mix called Fry Magic and I just dip and deep fry the fish. *A great sauce is equal parts sour cream and mayo. *Then add dried ground Chipotle pepper to your taste. *Excellent! Summer is just around the corner and for me that means it's taco time!

I love fish tacos and am constantly plagued by the question of what fish to use. I think I gotta go with catfish but rock cod is a close second.

I also love blackened salmon tacos, however. Lingcod is, of course, awesome but I always feel a bit guilty, like it is too good for tacos or something. Halibut is commonly used but too meaty, in my opinion.

Also, would anyone like to share their fish taco sauce recipe? I like making a spicy red pepper/garlic aeoli.
