    You might want to try this for SOME of the meat also - it's real simple.
    (sniffers, feel free to chip in if I missed something) Cube some of the sturgeon
    in even sizes aprox. 1 1/2 to 2 inch cubes. Boil 2 Liters of 7up in a large pot
    and add a little salt, at boil, add the fish cubes. They will sink at first. When they
    start to rise to the top, get them out with a skimmer and onto a plate. Drizzle
    some melted butter on them or have melted butter on the side for dipping.
    That's it - it is kick butt! Tastes very similar to LOBSTER.

    Congratulations! You have caught what I think is the best eating fish bar none.
    I'm with the other Sniffers on this one - Beer Batter cubed white meat Sturgeon.
    Actually, Striper and Halibut are also great fixed this way.
    It doesn't get a whole lot better than that.

    Great beer batter? Just Use Krusteaz pancake mix and just use beer instead of water.
