My boat isn’t fast, it’s halve-fast, but I haven’t had any issues with leaving the top up at 35 mph. I imagine that you would want to angle the top so that it is parallel to the surface of the water when the boat is on plane, this would minimize the surface area subjected to the incoming wind. Kind of like how you can scoot across the lake at a good clip with a ball cap on, if you keep the bill pointed into the wind it won’t blow off.

If you're underway on the water, you should be alright but if you're towing your boat with the bimini top up, then I'd suggest to fold it down.
