    Redtails floured and fried really and really fast. You should be able to eat the fins like potato chips.

    OR

    Redtail sashimi. This is my personal favorite.

    i do them simple - clean + get small fillets, pan fry with butter and a wee bit of lemon. light tasty fish

    I have only tried redtails and I found them to be very tasty but not as firm as rockfish or ling, I tried them whole on the grill seasoned with old bay and even though I wasn't crazy about the texture I polished of four nice ones myself.

    Perch are my favorite! My family hates bones so I fillet them and carefully cut down the seams where the bones are and cut them out. then I put my favorite breading and fry up some fish and chips. They are tasty!

    I like to filet them,then cut in small cubes.Let sit covered in lemon juice overnight ,drain in morning, and Shazaam you have Cerviche, mix in a little salsa of your choice and your ready for tortilla chips!!!<><>SANCHO

    Cut the head off, gut them, and season w/ whatever you like, Dust w/ flour or cornstarch then deep-fry!!
