In my country we have reusable cooking devices made of flat metal -- in English, I think they're called frying pans.* I would try to prepare the perch in the same way as you suggest, but then I would cook them for a while on one side then flip them to cook on the other side.* After cooking, the frying pan can be cleaned and used again.*

I have only tried redtails and I found them to be very tasty but not as firm as rockfish or ling, I tried them whole on the grill seasoned with old bay and even though I wasn't crazy about the texture I polished of four nice ones myself.
Perch are my favorite! My family hates bones so I fillet them and carefully cut down the seams where the bones are and cut them out. then I put my favorite breading and fry up some fish and chips. They are tasty!
I like to filet them,then cut in small cubes.Let sit covered in lemon juice overnight ,drain in morning, and Shazaam you have Cerviche, mix in a little salsa of your choice and your ready for tortilla chips!!!<><>SANCHO
