    Buck hunting has been going well. Firing up the smoke tomorrow night. 3 days in dry brine for one buck, 3 days in a home made ginger teriyaki brine for the other. Just started the 24 hours of drying in cool and dry concealed place.

    Well the two day curing process is done, popped it in the smoker for 3 hours and it's already looking good. Another two hours to dry it out a bit.
