Its that time of the year fresh apples off our trees, 2 cups sugar 4 apples peeled and chopped I usually use the food processor and grate then small. 1/2 cup salad oil, 1 cup chopped nuts if wanted, 2 eggs beaten, 2 teaspoons vanilla, 2 cups flour, 2 teaspoons baking soda, 2 or more teaspoons of cinnamon 1 teaspoon of salt.
Pre-heat oven to 350
Mix the sugar thru the apples, combine the oil, nuts, eggs and vanilla, then add to the sugar and apples. next mix the rest of the dry flour, salt, baking soda, then add to the apple mixture stirring until all the ingredients are well mixed. Pour into greased and floured 9x13 pan. Bake in oven for 60 minutes or so really moist cake no icing is needed but you could always add some whipped cream on top. Bet you can't eat just one piece.
