Although my recipe is good for halibut, you can use other white fish as well.
The various flavors in the fish casserole create a delicious broth that compliments boiled new potatoes. Just imagine them soaking up that flavorful broth. Yum! You can also take leftover new potatoes, slice them, fry them with chopped green onions, and serve them with this dish. Double yum! Of course, with boiled potatoes, you have a very low-fat entree. Go for it!
Put half the tomatoes and onions on the bottom of a casserole. Salt & pepper. Place fish on top. Place remaining tomatoes and onions on top of fish. Add salt, pepper, and parsley. Also add baby carrots to the casserole. Cover and cook at 400 degrees for 40 minutes. Good served with new potatoes and green vegetable. Serves 2 perfect parents.
- 1 lb. fish fillets (white sea bass or halibut are good)
- 1 can S & W stewed tomatoes
- 1 large onion, halved and sliced
- 1 dozen baby carrots
- salt & pepper
- minced parsley
