Fried Halibut Sandwich

This fried halibut sandwich is made using fish that was first dipped in egg or milk, then seasoned cracker meal, then fried. I often fry more fish than we can eat for dinner so that I can have some leftover for snacks or sandwiches. Pack this sandwich to bring to work and it'll really brighten your lunch hour.

  • 1 leftover fried halibut filet (preferably breaded with seasoned cracker crumbs)
  • 1 Tbsp. mayonnaise
  • 1 tsp. Dijon mustard
  • 1/2 small red onion, sliced thin
  • 1-2 butter lettuce leaves
  • salt & pepper
  • 1 soft french roll
Stir the mustard into the mayonnaise until fully blended and spread onto the french roll. Salt & pepper one half of the roll. Arrange lettuce on that half. On other half, arrange the onions, then lay the fillet on top. Place both sides together and slice sandwich in half. Serves one.
