So far, this year we haven't been doing much fishing. Mostly, because our boat's trailer is getting so decrepit that we hate to take it out anywhere. It's hard to find an old trailer for an old 15-1/2 ft. boat that is reasonably priced, but we continue to search through the ads.
Meanwhile, we just bought a used 12 ft. aluminum boat, trailer, and motor. Hopefully, this will start to provide us with some different inland adventures this year. We have all sorts of ideas about what we can do with our new toy.
Anyway, this month I took some small rockfish fillets and created this tasty casserole made with spaghetti. If you are in a hurry, you can skip the sauce part of the recipe and just use a chunky vegetable-type bottled sauce in the recipe. I made this sauce using orange tomatoes and orange bell peppers that I froze last year in my freezer. However, the standard green peppers and red tomatoes would be just as delicious. Go for it!
Preheat oven to 375 degrees. Firstly, we'll make the sauce. Take a pot or skillet, heat to medium, and add 1 Tbsp. olive oil and 1 Tbsp. butter. Heat to melt butter and add mushrooms, onions, and bell pepper. Cook until all are softened. Stir in garlic, Then, add tomatoes and simmer gently for 10 minutes. Just before you turn off heat, stir in basil.
- 3/4-1 lb. 1/4" thick fish fillets, in 2x3" pieces
- 1/2 pkg. plain or garlic/parsley spaghetti
- 1/2 lb. fresh mushrooms, sliced
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 3 C peeled & chopped tomatoes
- 2 C shredded mozzarella cheese
- 2 Tbsp. finely minced fresh basil leaves
- 3 cloves garlic, finely minced or pressed
- olive oil
- salt & pepper to taste
- 1/4 C parmesan cheese, grated
- olive oil spray
While preparing sauce, heat a large pot of water and cook spaghetti. When cooked, drain. Make sure that before you add the raw spaghetti to the boiling water that you break it into 2-3" lengths (this will make it easier to arrange in the casserole).
Heat a large skillet to medium-high. Add 2-3 Tbsp. olive oil and 1 Tbsp. butter to melt. Add fish pieces and brown each side quickly. Salt and pepper fish to taste.
Next, we'll arrange all the ingredients in the casserole. Spray inside of casserole with olive oil spray. Then, evenly cover bottom of casserole with half the sauce. Follow with half the spaghetti arranged in an even layer over the sauce. Next, half the mozzarella in an even layer over the spaghetti, followed by all of the fish pieces arranged evenly over the cheese. Follow with the remaining half of the mozzarella, spaghetti, and sauce. The final touch is a dusting of parmesan cheese over the top.
Place the casserole in oven and bake for 20 minutes. Serves 4 hungry heartthrobs.
