Simple Shrimp Scampi

On the stove top:

Heat slightly 1 TBSP olive oil in a non-stick skillet.

  • 4 cloves garlic minced
  • 1/4 C flat leaf parsley chopped
  • Juice of 1 lemon
  • 1/4 C water
  • pinch of dried red pepper flakes
  • salt & pepper to taste

Bring to a boil and simmer 1 minute.
Add 1 pound large shrimp, raw and peeled, and cook 5-6 minutes or until just pink.

That's it, we serve it with a little brown rice, as the sauce is great and low cal!
