Take the days catch & stuff the Trout with onions, bell peppers, garlic & a little cilantro.
Slow roast over a wood fire (we use an adjustable tripod hanging grill).
Flake off the meat & the stuffing into tortillas warmed on the grill. Add a little cheese & some prepackaged salad, a squirt of Ranch dressing & you are loving life!
